The Fish Society describe the quality of our fish as 'Breathtaking' and go on to say This is the hard as a cricket bat version of salt cod. Needs two days of soaking and several changes of water. Our offering is a skinned fillet - please note that this is a genuine deluxe version of hard salt cod, 100% edible, boneless and with only an inch of skin at the tail end of the fillet. It is produced in Scotland by an inspired specialist who air dries the fish after salting. Whole fillets are cut into 2 or 3 pieces for ease of handling. Because it needs no refrigeration, we can send by normal mail.
