Salt, Air Dried Shetland Cod

Our salt cured cod are the highest quality, hand-crafted artisan produce. We only use the finest, freshest and fully traceable cod.
Our promise is that all our fish comes from local, family owned fishing boats that make short trips to catch from sustainable, quota controlled stock. All our fish is landed to Shetland's fish markets and are caught from the pure, wild waters around our islands.

We also cure a range of whole fillets and traditional whole salt dried fish. Thule Ventus are delighted to salt cure cod, pollock, coley, haddock and whiting, either skinned or unskinned for you. We make these to order, so please allow some time for delivery. Please have a look on our products page for more details or contact us for a bespoke order.

Our fish is lovingly prepared in small batches, in a process that takes at least a month, to create truly unique and special seafood. There are other salt cured fish available, but none quite like the ones prepared by our traditional family methods, from the pristine, wild seas around Shetland, and cured with time and the pure Shetland wind. 
We even use Kosher Salt, so the only ingredients are fish and salt... absolutely nothing else.
Our fish needs to be re-hydrated over 24-hours, which can double the weight and draws out most of the salt, leaving a delicate, unique flavour and texture. Simply place in water and change the water twice. The ultimate slow food.
